Thai Tea Cream
Whole-leaf Thai black tea from the northern highlands, hot-steeped straight into cream and left to infuse overnight before whipping. The spice โ star anise, cardamom, a trace of vanilla โ comes from the leaf itself, not from syrup added after.
Pineapple & Litsea
Whole pineapple, cut in-house and reduced slowly in a wide pan until the fruit turns from pale to amber and loses half its weight. Litsea cubeba goes in at the very end โ a mountain berry that reads as lemongrass first, then a low warm pepper. This is the layer people ask about.
Pandan Chiffon
Fresh pandan leaf extracted in-house, no colouring. Green the way a leaf is green โ soft, slightly grey, never neon. Light enough to carry the tea cream without adding weight to the slice.
Coconut Milk Pudding
Set only just enough to hold a clean edge on the knife, and soft enough to give way on the spoon. It sits between the tea and the fruit and keeps the two from arguing.

Storage
Best enjoyed the same day. Keep refrigerated until serving. Rest 15 minutes out of the fridge โ the coconut layer loosens and the tea opens up.

Every cake leaves our kitchen by hand. Small differences in colour, decoration, and finish are natural to fresh cream cakes and aren't treated as defects. Orders are held until closing on your pickup date โ tell us in advance if you need another time.
